Chocolate Cake for Two

Hot, spongey, rich and gooey chocolate cake is ripe for any occasion. Especially just for two.

This recipe is easily made vegan using dairy free ingredients.

What you'll need: Serves 2

For the cake mix:
1/2 cup flour
1/4 cup + 2 Tbsp granulated sugar
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/3 cup cocoa powder
1/2 tsp vanilla extract
1/2 cup milk of choice

For the lava:
1/4 cup chocolate chips
2 Tbsp milk
2 Tbsp butter

How to make it:
Preheat the oven to 350° F.

Grease inside each ramekin with a thin layer of plant butter and place them on a cookie sheet. 

Mix together the cake mix in a medium size mixing bowl. Stir until fully combined. Set aside.

Microwave the chocolate chips, milk and butter in a microwave-safe bowl and cook in 30 second increments, stirring in between, until fully melted. 

Pour enough of the cake mixture inside each ramekin just to cover the bottom. Make sure not to add too much at first, or the lava filling will be at the top. Pour the chocolate chip "lava" in the center, then top with the rest of the cake mixture until they're about 3/4 full each. Swirl with a knife to distribute the lava if necessary.

Bake for 16-20 mins. The edges will be set but the middle will be jiggly.

Serve hot with a sprinkle of powdered sugar, or your favorite vanilla ice cream and berries.
