Vegan Chocolate Donuts

These chocolate donuts are a must! Super easy one-bowl mixing and a quick 8 minute bake. My kids love them, and so do I! They're light and fluffy with chocolatey goodness overload - plus they’re easily vegan!

What you'll need: Makes 12 donuts
3/4 cup flour
1/4 cup dutch-process cocoa
1/2 cup sugar
1 tsp baking powder
1 tsp baking soda
1/4 teaspoon salt
1/3 cup applesauce (or one 3 oz pouch, or 1 egg)
3/4 cup milk of choice
1 teaspoon vanilla
4 Tbsp butter, room temp (or plant butter)
Sprinkles *optional

For the glaze:
1/3 cup df chocolate chips
1 Tbsp coconut oil

How to make it:
Preheat the oven to 450° F.

In a large mixing bowl, add in all of the dry ingredients, then add the butter. Mix with a hand held electric mixer until crumbly.

Add in the milk and vanilla. Mix again until fully combined and becomes a wet batter.

Spray the donut cake pan with baking spray oil.

It's optional to pour batter into a plastic ziplock bag, clip the tip and drizzle into each donut cake pan hole. Otherwise, you could just spoon the batter into each hole, avoiding the middle bump. Fill about 3/4 full.

Bake for 8 minutes. Let rest in for one minute before removing to cool on a wire rack. They're fragile right out of the oven. Letting them rest helps them set up a little bit, so they're easier to handle. Use an offset spatula to break the edges away from the pan and carefully lift the donut out.

Let cool completely before frosting. During this time, melt the chocolate chips and coconut oil in a small bowl in the microwave in 30 second increments, stirring in between. Should take about 90 seconds total.

Dip one side of the donut into the chocolate glaze. Sprinkle with your favorite sprinkles and enjoy!
