Three Cheese Pesto & Prosciutto Grilled Cheese
Grilled cheese has a good wrap for a good reason. Crispy, toasted bread surrounding gooey cheesy goodness; then add salty prosciutto and herby pesto and you have yourself a very satisfying sandwich.
What you'll need: Makes 2 sandwiches
4 slices of your favorite bread loaf (Italian, French, Vienna, etc.)
4 slices prosciutto, pan fried
1/4 cup pesto (1-2 Tbl per sandwich)
4 oz mozzarella cheese, thinly sliced
4 oz provolone cheese, thinly sliced
1/4 cup fresh grated parmesan cheese
4 Tbl butter
How to make it:
Cook the prosciutto in a skillet over medium heat for about 5 minutes on each side until browned. It will crisp up as it sits. Set aside.
Spread butter on one side of each piece of bread. Spread a layer of pesto on non-butter side, then layer up mozzarella, prosciutto, provolone, and freshly grated parmesan. Top with the other piece of bread, butter side up. Repeat for the second sandwich.
Cook for 4-5 mins on each side, or until done to your liking.
Make sure you're using block cheese and not pre-shredded. It won't melt the same and you'll be bummed out.
