The Best Banana Bread
This banana bread has been a long standing recipe in our family. It's perfectly moist and just so, so yummy. Everyone thinks their recipe is best, but this one truly is. It's delicious on its own but you can add chocolate chips or nuts, too. We love it as muffins for a perfect on-the-go breakfast or after school snack.
What you'll need:
1 c sugar
1/3 c (or 6 Tbl) butter or butter alternative
2 eggs
5-6 large ripe bananas, mashed
1/2 tsp vanilla extract
1 2/3 c flour
1 Tbsp baking soda
1 tsp baking powder
1/2 tsp salt
How to make it:
Preheat oven to 350° F.
Mix sugar and butter together with a hand mixer until mostly smooth.
Add eggs, mashed bananas, and vanilla. Beat until fully combined and a little frothy.
Mix together dry ingredients in a separate bowl. Slowly add it to the wet mixture in two parts until all is just combined. Fold in chocolate chips or nuts if desired.
Line a loaf pan with parchment paper; or use muffin cups in a muffin tin.
Bake a small loaf for 35-40 minutes, or 55-60 minutes for a large loaf.
Bake muffins for 18-20 mins.
Jumbo muffins for 25 mins.
Mini muffins for 12-15 mins.
The tops will be light golden brown. Check for doneness with a skewer or toothpick.
Remove from the pan and let cool on a wire rack.
Enjoy hot out of the oven with a slab of butter; or if you're patient and know baked goods peak on day two, let completely cool and store on the counter in a covered container until morning. They will be so moist and delicious, you won't be able to stop eating.
