Sweet Pepper Poppers
These sweet peppers are loaded with the creamiest, cheesiest jalapeño filling, and topped with crispy, toasty Panko breadcrumbs. It's the perfect, most delicious appetizer for game day, a birthday, or any day spent with friends!
What you'll need: Serves 10
1-2 lb bag sweet peppers (depending on the size of your crowd)
2 fresh jalapeños
2 - 8oz cream cheese packages
1 cup mayonnaise
1 tsp garlic powder
1 tsp onion powder
light sprinkle Paprika
1 cup freshly shredded cheddar cheese (not pre-shredded)
1 - 4 oz can green chillies
1/4 cup Panko breadcrumbs
2 Tbl butter, melted
How to make it:
Preheat the oven to 375° F.
Rinse and prepare the peppers by slicing lengthwise in half, then removing and discarding the seeds. Set aside on a serving plate.
Make the filling: Finely dice the jalapeños and set into a medium-sized oven safe dish with the cream cheese, mayo, shredded cheddar, garlic powder, onion powder, paprika, and the can of green chillies. Mix together until fully combined.
Bake for 10 mins. Stir and let slightly cool while you finish the rest of the prep.
Melt the butter in a small bowl in the microwave for 30 seconds. Add the Panko and mix. Spread the breadcrumbs out on a baking sheet and Broil on high for 2-4 mins until golden brown. They'll burn quickly so keep an eye on them. Let cool.
Spoon the warm jalapeño dip into each halved pepper until level. Sprinkle each pepper with the toasted breadcrumbs.
Any leftover dip can be served with Ritz, Club crackers or salsa chips.
