Steak Sandwich with Garlic & Herb Aioli

Steak sandwiches are so good. This one is especially awesome. Plus, when you top your buns with this garlic and herb aioli, you'll be hollering for a second helping on your first bite.

If you have a Costco membership, be sure to ask the butcher for their "bacon-like sliced steak". All the work is done for you and the Beef Loin New York cut is not lacking any flavor. If you can't get these super thinly sliced steak strips, you can still make these! There are many pre-sliced steaks that would be sandwich-compatible. Beef Milanesa, Sirloin Strips, or you could even slice your own favorite cut; just be sure to cut against the grain for a tender bite.

What you'll need: Serves 4
8-16 pieces of steak strips, 4 per sandwich
Pinch of salt
Steak Rolls or Kaiser Rolls
Provolone cheese slices, 2 per sandwich
Greens for topping (like arugula or spinach)

Garlic + Herb Aioli
1/3 cup mayonnaise
1/2 tsp apple cider vinegar (or rice wine vinegar)
3-4 large garlic cloves, minced
1 Tbsp onion (red or yellow depends on your flavor profile), finely diced
1 tsp dijon mustard
1 tsp worchestire
small squeeze of lemon juice
pinch of salt
2 Tbsp fresh parsley, finely chopped
1 tsp rosemary, finely chopped

How to make it:
Mix all of the aioli ingredients together in a small bowl and set aside. You want the flavors to meld and develop.

Set the oven to low broil to get it warmed up.

Using a cast iron pan, preheat over medium heat with a quick spray of cooking oil or a dab of butter.

In the hot skillet, place a couple strips of the thinly sliced steak down without overlapping. Give a little sprinkle of salt to one side. Watch them carefully, they won't take more than a minute to fully cook! Flip, then quickly remove to a plate. You don't want to overcook these.

Cut the buns in half, and add 2 slices of cheese slices. Place them on a baking sheet under the broiler for 1 minute - watch carefully.

Assemble the sauce, steak and any other toppings you like, and enjoy!
