Roasted Pumpkin Seeds
Roasted pumpkin seeds are the perfect snack. They're packed full of protein, unsaturated fats, beta-carotene, vitamin B, iron, calcium.. tons of nutrients! Plus, they're delicious and so easy to make. I've got five delicious flavors for you to choose from.
What you'll need:
~ 2-3 cups of freshly carved pumpkin seeds
Seasoning options:
Basic Salty
2 TBL olive oil
1 tsp Lawry's seasoned salt
Cinnamon + Sugar
3 TBL coconut oil or butter
1/2 tsp pure vanilla extract
4 TBL granulated sugar
2 tsp ground cinnamon
1 tsp sea salt
Italian Parmesan
2 TBL melted butter, or olive oil
1/4 cup freshly grated Parmesan
1 tsp Italian seasoning
1/2 tsp garlic powder
1 tsp salt
Spicy Chili Lime
2 TBL olive oil
1/2 teaspoon Chili (or Cajun) seasoning
1/2 teaspoon fresh lime zest (Note: Add the zest after roasting)
1 tsp salt
Buffalo Ranch
2 TBL of olive oil
1 1/2 TBL Buffalo Ranch Spice (or your favorite wing spice)
1 tsp salt
How to make it:
While carving a pumpkin, separate the seeds from the guts.
Place seeds in a large bowl and fill with water. Give the seeds a little massage to help clean them. If you have a bunch of the guts left on the seeds, they won’t cook properly.
Let them soak for about 15 mins. If most of your seeds sink, the seeds are probably bad/rotten. Keep the floating ones.
Drain then dry on a clean dish towel or paper towels. I left mine there to dry overnight but you can pat dry and continue the next steps. Letting them dry as long as possible will help achieve crispy seeds.
Preheat oven to 275° F.
Get your largest sheet pan (with a lip) and cover with parchment paper.
Dump the seeds into a mixing bowl.
Choose your flavor profile and mix those ingredients in a small bowl. Pour over the seeds and mix until fully coated.
Spread the seeds on the baking sheet. To you best, make sure they don’t overlap.
Bake for 45-60 mins depending on the quantity and doneness you like. Stir every 15 mins to ensure even cooking. If they remain soft, return to the oven, checking them after 5 minutes. Continue baking in 5 minute intervals until done.
Store in an airtight container and enjoy!
