Pumpkin Chip Muffins
My grandma had this recipe written on a Post-It note. She made these muffins all the time and knew how by heart. I am thankful she quickly jotted it down so oneday I could bake them with my kids. These muffins are easy to make and kid-approved!
What you'll need: Yields 2 Dozen
4 eggs
15 oz canned pumpkin pureé
1 1/2 cup vegetable oil (or avocado oil)
3 cup flour
2 tsp baking soda
2 tsp baking powder
1 tsp cinnamon
1 tsp salt
2 cup chocolate chips
How to make it:
Preheat oven to 400° F.
Mix the eggs, pumpin and oil on medium speed until smooth. In a separate bowl, mix together the dry ingredients; slowly add into the wet and fully combine. Fold in the chocolate chips.
Bake for 14-16 mins. Let cool in pan.
