Pimento Cheese Dip

Golf is a pretty big deal around here. To celebrate the season, I made one of the most iconic Masters' tournament specialities: Pimento Cheese Spread; however, I made it into a chip dip.

The famous recipe is a traditional southern sandwich spread that has been served at the Augusta National golf tournament concession stands for over 50 years. Use this secret recipe spread as a dip to enjoy with chips, crackers, celery, ect.

Masters patrons know that going to the tournament is not just about golf. It’s also about the food, especially the famous pimento cheese. To get this recipe right, be sure to shred block cheese - you'll be disappointed in the results from pre-shredded in a bag. Now, let's make some of this spread!



What you'll need:
8 oz block sharp cheddar cheese, shredded
4 oz block Monterey Jack cheese, shredded
8 oz cream cheese, soften to room temperature
1/2 cup mayonnaise
4 oz jar pimientos, small diced in jar, drained
1 teaspoon sweet yellow onion, very finely minced
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 teaspoon black pepper
Kosher salt and freshly cracked black pepper to taste
Potato chips for serving

How to make it:
Place all of the ingredients except for the pimentos in a medium mixing bowl. Mix thoroughly until smooth and combined. 

Next, drain the pimentos in a fine mesh strainer. Discard the juice. Fold pimentos into the cream cheese mixture.

Season to taste with salt and black pepper. Serve with potato chips, or keep the tradition by spreading it on soft white sandwich bread.
