Peanut Butter Chocolate Pudding Cups

These pudding cups are rich and decadent, salty and sweet. They're perfect for an easy make-ahead dessert that'll serve your next crowd with raving reviews! 


What you'll need: Serves 20 3oz cups

For the pudding:
2 - 3.4 oz boxes white chocolate flavored instant pudding
4 cups milk
1 cup creamy peanut butter
2 tsp vanilla extract

For the chocolate ganache:
1 cup chocolate chips
1/2 cup heavy cream

For the garnish:
Butterfinger candies, chopped - or
Reeses Cups, chopped
1 sleeve Ritz crackers, crushed

How to make it:

In a large bowl, mix together the white chocolate pudding and milk for 2 minutes with an electric mixer. Once thickened, add in the peanut butter and vanilla extract. Mix until fully combined. Set in the fridge to set up for 5-10 minutes.

In a small bowl, microwave the chocolate chips and heavy cream in 30 second increments for about 2 minutes, stirring in between. Continue to melt until all lumps are gone.

Chop the candy and set aside. Crush the Ritz crackers into fine crumbs, then place about 1 teaspoon into each shot glass.

When the pudding has set up, spoon into the cups about half way filled. Drizzle the chocolate ganache down, then add in some chopped candy and crushed crackers. Layer more pudding, chocolate, candy, crackers until filled.

Place in the fridge for at least an hour before serving to chill. A 9x13 cake pan was perfect for housing 20 of the cups. Use tape to square out holes over the pan if necessary.

Serve with a Ritz cracker for an extra salty bite, and sit back to hear all the "mmmm"s your guests will no doubt squeal.
