One Skillet Beef & Noodles
The beauty of a one skillet meal is it comes together so quickly, yet yields all the flavor. This dish is similar to a stroganoff but way less involved to make and is dairy free. Perfect for those nights on the run.
What you'll need: Serves 6
1 lb ground beef
1 package egg noodles
32 oz carton of beef broth
1 tsp onion powder
1 tsp garlic powder
1 tsp Italian seasoning
1 Tbsp cornstarch for thickening
salt and pepper to taste
How to make it:
In a large skillet or braiser, cook the ground beef over medium-high heat, breaking it up into small chunks. Add the seasonings. When the meat is fully cooked, pour in the carton of broth (reserving about 1/4 cup in a glass to mix with the cornstarch).
Add in the noodles and cornstarch slurry, stir, then cover to bring back to a boil and cook for about 5 minutes. The noodles will absorb most of the liquid and create a sauce that will thicken slightly as it cools.
Serve with your favorite green veggie, and enjoy!
*I like to top mine with fresh basil, as my husband likes to add a dollop of sour cream or goat cheese. These flavors meld beautifully with herbs and cream if you're not dairy free. Even fresh corn would be delicious in this dish.
