Mild Chicken Green Enchiladas
These enchiladas are filled with gooey cheeses, rotisserie chicken and healthy dab of sour cream, then doused in a savory mild green chile sauce - and topped with more cheese. If you're looking to mix up your Taco Tuesdays, these hit the spot.
What you'll need: Serves 4-6
8 flour tortillas
8 oz sour cream
4 oz mozzarella, shressed
4 oz sharp white cheddar, shredded
2 breasts rotisserie chicken, shredded
10 oz mild green enchilada sauce
Optional Toppings:
sour cream
pico de gallo
diced jalapeños
cilantro
How to make it:
Preheat the oven to 425° F. Put parchment paper down in a 9x13 baking dish to prevent sticking.
Shred the rotisserie chicken breasts. Set aside.
Spread sour cream down the center of the tortilla. Sprinkle both types of cheese on top of that, then the chicken. Tuck both ends of the tortilla in and roll up, placing in the baking dish as you go.
Sprinkle the remaining cheese over the enchiladas. Then pour over the green enchilada sauce.
Bake for 20-25 minutes, or until the cheese bubbles.
Top with your favorite toppings and serve with a side of Mexican rice.
