Meatloaf Meatballs
These meatballs have all the same flavors and comfort of your momma's meatloaf, but are smaller and more fun to eat. They're made with homemade onion mix and a three ingredient ketchup sauce.
What you'll need:
1.5 pounds of ground beef
1 tsp Worcestershire (or Coconut Aminos for Whole30)
1/2 cup bread crumbs (or crushed saltine crackers, or 1/4 cup almond flour)
1/4 cup minced onions, dried or fresh
1/2 tsp celery salt
1/2 tsp ground turmeric
1 tsp garlic powder
1 tsp parsley, dried or fresh
pinch of salt
black pepper to taste
For the sauce:
1/4 cup ketchup
a few dashes of Worcestershire (or Coconut Aminos)
1/4 tsp (just a couple drops) apple cider vinegar
How to make it:
Preheat oven to 400° F
In a large mixing bowl, add ground beef and mix together with minced onions, celery salt, ground turmeric, garlic powder, parsley, salt and pepper together. Then add in the bread crumbs and few dashes of Worcestershire. Make a fork with your fingers and fold in the seasonings just until fully combined. Use a cookie scoop to help make even meatballs. You'll make anywhere from 18-24ish. Place on a baking sheet.
Make the ketchup sauce. If you don't have a basting brush to coat the meatballs, just gently toss or roll them in the sauce.
Bake for 10-15 minutes, depending on the size of the meatballs. Serve them with your favorite mashed potatoes.
