Lemon Vinaigrette

Vinaigrettes are the healthiest salad dressings due to the use of low calorie, high good fat oils mixed with something acidic like vinegar or lemon juice. However, store bought varieties can be chalked with all sorts of garbage ingredients like preservatives, artificial colors and sugars.

Vamp up your salad with your own dressing made with olive oil, a squeeze of a half lemon and a pinch of salt. It's that simple. So fresh and light, and not in the least bit boring. Pair your salad with grilled chicken and squeeze the other half of the lemon on the chicken while cooking.

What you'll need:
1/4 cup olive oil
Juice from half a lemon
Pinch of salt

How to make it:
Just shake in a mason jar until emulsified and enjoy!

Some of my favorite ingredients to use in salads is fruit! Fresh strawberries or dried cranberries give salad a lovely sweetness; then add feta cheese for a salty balance. Red grapes pair unbelievably perfect with bleu cheese crumbles. Slivered almonds or walnuts are unsuspected and give a nice texture and nutty flavor as well. All of these pair deliciously with the lemon vinaigrette.
