Lemon & Herb Crusted Halibut

Halibut is such a delight. A luxury, if you will. It’s light and flaky with no fishy taste. This crispy, lemony-herb crust creates a lovely texture and delivers on all aspects. You just have to try it!


What you'll need:
Serves 2
2 (6 oz) halibut fillets
1 tsp dijon mustard
1 tsp mayo
2 Tbsp melted butter
1/2 cup panko bread crumbs
1 Tbsp chives, finely chopped
1 Tbsp parsley, finely chopped
1 tsp finely grated lemon zest
1 tsp lemon juice
Salt to taste

How to make it:
Preheat the oven to 400° F. Line a baking sheet with parchment paper.

Pat the halibut dry with a paper towel. Place on prepared baking sheet and generously salt each filet. Brush on a thin layer of a Dijon mustard and mayo mixture. Set aside.

In a small microwavable bowl, melt the butter. Once melted, add panko, herbs, salt, lemon zest, and lemon juice and mix until well combined. Spoon the mixture on the filets and press down firmly with your fingers

Bake on the middle rack for about 10-15 minutes, or until the panko is browned and halibut is cooked through. Test with a fork by pulling apart an edge; it should flake away when it's done.

Serve hot with a side of Asparagus Risotto.
