Lemon Blondies

Blondies have the texture of a brownie, but instead of chocolate, these are bursting with lemon. They’re soft and fudgy, and taste incredible. Summer summed up in a mouthful. They are so easy to throw together and will brighten up any dessert table!



What you need:
1 cup butter (or plant butter), melted and cooled
1 cup granulated sugar
1/2 cup powdered sugar; plus extra for dusting
4 eggs, room temperature
Zest of 2 large lemons (~3 Tbsp)
2 Tbsp lemon juice
4 tsp vanilla extract
2 tsp lemon extract
2 cups flour, sifted
1/2 tsp salt

How to make it:
Preheat the oven to 350° F.

Line an 9x13 baking pan with parchment paper and set aside. Lightly spritz with baking oil spray.

In a large mixing bowl, whisk the cooled melted butter, granulated sugar, and powdered sugar together.

Add in the eggs, lemon zest, lemon juice, vanilla extract, and lemon extract, and mix to combine.

Gently fold in the sifted flour and salt until just fully combined.

Pour the batter into the prepared baking pan, spread the batter evenly, and bake for 16-17 minutes. The blondies won't look golden brown - don't over bake them. Think fudgy brownie texture.
