Homemade Salsa
This fresh homemade salsa is better than takeout and comes together in 5 minutes tops. It's fiesta time!
What you'll need:
29 oz canned diced tomatoes, drained
10 oz can of Mexican Style Lime and Cilantro Rotel, drained
1/4 of an onion, roughly chopped
3 Tbsp fresh cilantro
1/2 tsp cumin
1/2 tsp garlic powder
juice of half a lime, to taste
zest of half a lime
healthy pinch of salt
How to make it:
You can use a blender, food processor or and hand emulsion blender. Drain both the diced tomatoes and the Rotel.
Roughly chop the onion and reserve some extra before blending if you like it chunky.
Blend all of the ingredients together, pulsing to get your preferred consistency.
If you want to make a smaller batch, use the 14.5 oz can of diced tomatoes and half the can of Rotel.
The flavors continue to meld over time so second day salsa is even better. Keep refrigerated. Use within 5-7 days - if it'll last that long.
