Grilled Pineapple
Pineapple is one of the best fruits for grilling. It's high in sugar, which means it will caramelize beautifully over the high heat. Plus it's incredibly delicious.
The first time I had this was at a Brazilian steakhouse for dessert. I was floored on how warm pineapple could actually be as delicious as it was. It's become a regular accompaniment when grilling for me.
How to make it:
Remove skin by either using a pineapple corer tool, or use a chef's knife to slice the skin off the flesh. Be sure to cut around the core. Cut the pineapple into flat, grill-friendly slices, and grill the pineapple over a medium-high grill (which is somewhere between 350 and 450 F) for 3 to 6 minutes or until nicely browned and slightly charred on one side, then flip with tongs and repeat.
Grilled pineapple makes for a fabulous after-dinner dessert or snack anytime.
