Grilled Mexican Street Corn

Grilled corn is a tad smokey and juicy as can be - now top that with a street corn sauce and you’ve got a fabulous side to tacos, burgers, chicken, steak - you name it!

What you’ll need: Serves 4-6
4-6 ears of corn, shucked
1/4 cup sour cream
1/4 cup mayo
1 garlic clove, minced
1/2 tsp onion powder
1/2 tsp chili powder
1/4 cup queso fresco, crumbled
Cilantro
Pinch of cayenne pepper if you like it spicy

How to make it:
Shuck and discard the peel. You can cook on the stovetop with a cast iron griddle over medium-high heat, or straight over low flames on the grill. Cook for about 10 minutes, rotating every few minutes.

Mix together the sauce ingredients in a small dish and set aside.

Spread the sauce over the grilled cobs and garnish with cilantro.

Serve hot and enjoy!
