Garlic Parmesan Sweet Potatoes

Sweet potatoes are so underrated. They're highly nutritious filled with fiber, minerals, vitamins and antioxidants - and they're super delicious. This is a double roasted method to achieve a perfectly satisfying, crispy, salty, garlicky, sweet sweet potato.

This is a side dish that's awesome with steak, turkey, chicken, burgers, breakfast, and as a snack. Let's get started.

What you'll need:
4-6 large sweet potatoes (one potato per person)
2 Tbl olive oil
2 Tbl butter or vegan butter
1 tsp garlic salt, or 1 minced garlic clove
1 Tbl parsley - fresh or dried
1/4 cup freshly grated parmesan cheese
1 tsp salt

How to make it:
Preheat your oven to 425° F. Scrub the sweet potatoes with a food brush or an abrasive food cloth.

Slice in 1/4-1/2 inch pieces, but stay as consistent as possible. Spread them on a lipped baking sheet. Drizzle olive oil and salt all over them; flipping around to cover them all. Lay them out evenly, as close to one layer as you can. Bake for 15-20 minutes, or until they're just fork tender.

Take them out of the oven. Melt butter in a small bowl for 30 seconds. Add the garlic and parsley, mix and brush over the tops, covering each potato well. Add freshly grated parmesan cheese and place back into the oven. Broil on Low heat on top rack for 2-3 minutes, watching carefully, just until it starts to bubble and becomes slightly golden.

Serve immediately.
