Egg Roll in a Bowl
If you're on a journey to eating healthier, you have to give egg roll in a bowl a try. Loaded with ground pork that's seasoned with Asian spices and fresh slaw, it's deliciously satisfying all without the fried shell. This is an easy and flavorful dish that you'll add to your dinner rotation time and time again. Plus, you can make this whole meal under 15 minutes!
What you'll need: Serves 4
1 pound ground pork
3 tsp soy sauce (liquid aminos for Whole30)
2 tsp sesame oil
2 tsp white rice vinegar
1 tsp garlic powder
1 tsp onion powder
1 tsp fresh minced ginger (or 1 tsp ground ginger)
14 oz bag coleslaw mix
1/2 tsp Chinese five spice *optional
How to make it:
Brown the ground pork in a skillet on medium heat.
Add in all of the ingredients - except for the coleslaw - and stir to combine.
Just before serving, mix in the coleslaw and let that cook down for just another minute or two. You want to take the crunch out of the slaw without letting it completely wilt.
Garnish with toasted sesame seeds and/or slivered green onion if you like.
Serve hot and enjoy!
If you not grain-free, make some Jasmine rice to accompany this dish. So good!
