Date “Snickers” Bites

If you haven't tried the latest viral "Snickers", put it on your list to make ASAP! These literally taste just like a Snickers. They're sweet, salty, and perfectly chewy. Hits the sweet spot while keeping your sugar intake in check.

Dates are high in fiber and potassium, and contain protein, vitamins, magnesium, folate and other minerals. I use them in lots of ways: jam/paste, salad dressing, as a sweetener in smoothies and so much more. They're easy to process, delicious, and healthy to add to your food.

What you'll need: Makes 12
12 medjool dates, seeded
1/3 cup chocolate (dark, dairy free, Illy's for Paleo - your choice)
1/4 cup crunchy peanut butter
1 tsp coconut oil
flaky Maldon salt

How to make it:
Line a small baking sheet or serving platter with parchment paper. Set aside.

Combine the chocolate and coconut oil in a small microwave dish. Melt in 30 second increments, stir after each time. Set aside.

Score the top of the date open, not slicing all the way through. Remove the pit/seed and any loose stringy fibers; discard.

Fill the crevice with 1/2 tsp peanut butter. Slightly pinch closed.

Roll the peanut butter-filled date in the melted chocolate. Let the excess drip off and set on parchment paper. Repeat until finished.

Sprinkle with flaky Maldon salt.

Set in the freezer for 30 minutes, or until the chocolate has set.
