Dairy Free Ranch Dressing
Do yourself a favor and make your own ranch dressing. This simple recipe has all the ranch flavor you love and expect in a healthy, dairy-free version!
What you’ll need:
1 egg
1 cup olive oil (use extra light or good quality)
1 tsp dijon mustard
1 Tbsp lemon juice
2 Tbsp red wine vinegar
1 1/2 Tbsp Homemade Ranch Seasoning
1/2 cup full fat canned coconut milk, fully incorporated ahead of adding
You can replace the Homemade Ranch Seasoning with:
1 tsp salt
1 tsp pepper
3/4 tsp onion powder
3/4 tsp garlic powder
1 small handful fresh parsley (or 3 Tbsp dried parsley)
How to make it:
Add everything into a wide mouth jar. Use an immersion blender and, starting at the bottom, blend on high. Work your way slowly to the top of the jar as everything mixes and the egg emulsifies. If using fresh herbs, add in at the last 10 seconds and blend just until incorporated.
Do not start moving the blender around until the bottom starts to emulsify; then start to slowly bring the blender closer to the top, moving around until everything is emulsified.
Store in the fridge up to one week - if you still have any left! You'll happily dump this on everything: chicken, steak, salad… everything.
