Dairy Free Hamburger Helper(ish)

What you'll need: Serves 6
1 pound ground beef
16 oz box elbow macaroni
1 small yellow onion, diced
2-3 cloves of garlic, minced
1 cup unsweetened coconut milk
2 cups chicken broth
15 oz can tomato sauce
1 tsp oregano
1/2 tsp salt
1 Tbsp nutritional yeast

How to make it:
Start by sautéing the diced onion in a splash of olive oil on medium heat in a deep skillet (dutch oven). While the onion is getting softer, mince the garlic and have the ground beef ready to cook. Add the minced garlic when you're happy with the onions. Cook for one more minute, then add the ground beef. Cook until no longer pink.

Add in the coconut milk, chicken broth, tomato sauce, oregano and salt. Stir together. Then add in the box of noodles. Boil the noodles until the liquid has been absorbed and they're done to your liking. The noodles might like to stick to the bottom of the pan, so once it comes to a boil turn the heat down to medium-low and stir it around until it's done. If you need to add in more liquid, you can definitely do so. I like to add in about a 1/2 cup of broth at the end to thin it out, myself.

Once the noodles are done, sprinkle the nutritional yeast in at about 1/2 Tbl at a time, mix together and taste. You may want a light flavoring, or you can definitely add up to 2 Tbl for a stronger taste. This will thicken the dish as well as give it the cheesy flavor you're looking for.
