Cucumber Salad & Wine Vinaigrette
I’m trying to be more mindful of adding more veggies to my diet. This salad is a delicious way to do just that. Your tastebuds will spark in every direction from the tangy wine vinegar and sweet honey.
What you'll need: Serves 1-2
3 Tbsp olive oil
1 Tbsp red wine vinegar
1 tsp honey
Pinch of salt
1 minced garlic clove
1 English cucumber
1/3 cup grape tomatoes
1/2 red onion, thinly diced
How to make it:
Mix up the marinade ingredients in a small bowl, and chop the veggies.
Toss everything together and let marinate for a few minutes while you make a protein to accompany this salad to keep you fuller longer. You could choose to add some deli turkey slices for a quick lunch, pan fry a chicken breast, or even just a couple of hard boiled eggs.
