Cuban Sandwich

If you’re a sandwich fan, MAKE THIS CUBAN. The pulled pork is tender and flavorful, melty cheese, a perfect crunch with the pickle, but the sauce is out-of-this-world-good. A zesty bite that doesn’t leave your tongue. New favorite.

These are made in the InstantPot or CrockPot so give yourself enough time.

What you'll need: Serves 6-8
Steak rolls or French loaf
~2 pounds pork tenderloin, trimmed of fat
1 pound deli sliced ham
1/2 pound deli sliced swiss cheese
pickle slices
salt and pepper

For the brine:
2 cups chicken stock
3 cups orange juice
2 Tbsp cumin
2 Tbsp garlic powder
2 Tbsp onion powder
1 Tbsp salt

For the sauce:
3 Tbsp Mayo
2 tsp Dijon mustard
1 tsp yellow mustard
1/2 tsp Worcestershire sauce
Squirt of fresh lemon juice
3/4 tsp creole seasoning
Fresh parsley, chopped

How to make it:

Prep:
Trim the pork fat and slice into large chunks to fit into your InstantPot or CrockPot. Season with salt and pepper. Over medium-high heat, sear all sides of the meat in a cast iron skillet with a little cooking oil. Cook 4-5 minutes on each side.

Combine all the brine ingredients inside the cooking pot. Place the seared meat (and the resting juices) in the pot and set the InstantPot to Stew Meat and cook for 30 minutes; or cook for 6 hours on low (4 on high) in a CrockPot.

Prepare:
Slice your bread, and set aside.

Combine all the sauce ingredients into a small bowl. Smear the inside top and bottom with the sauce. Tip: if you have don't have creole seasoning, just add a few dashes of salt, pepper, chili powder, garlic powder, cajun, oregano, and paprika together. Add a pinch of cayenne if you want some heat.

Layer on a good helping of the shredded pork, leaving the juice behind.

Pile on a couple slices of sliced deli ham.

Add a piece or two of sliced swiss cheese.

Spread a thin layer of butter to the outside bottom of the sandwich (like you would a grilled cheese).

Place the sandwich into a hot skillet, press another skillet (like cast iron, or just add a weight) down onto the sandwich. Toast over medium heat for about 2 minutes; remove weight/pan, butter the top side, flip, and press again.
