Cilantro Lime Pork Tacos

Cilantro and lime are excellent partners for pork. The cilantro is fresh and earthy, while the lime wakes up the meat with a bright, tangy bite. This is an easy recipe that makes tender, mouthwatering pulled pork tacos with minimal prep work and great flavor.


What you'll need:
1-2 lbs pork shoulder (butt)
2 cups chicken broth
1/4 cup fresh cilantro
1 lime juiced, freshly squeezed
2 Tbsp barbecue seasoning
2 tsp salt

Optional toppings are endless:
fresh cilantro
squeeze of lime juice
avocado
pico de gallo diced jalapeños
sour cream or Mexican crema
queso fresco cheese
salsa

How to make it:

InstantPot:
Turn the IP on to Meat/Stew and set for 35 minutes. Add the roast, broth, cilantro, lime juice, BBQ seasoning and the salt to the pot. Close and seal the lid. Once cooked, shred the meat in the juices and let it sit to meld together while you get the rest of the ingredients out.

Crockpot:
Add the roast, broth, cilantro, lime juice, BBQ seasoning and the salt to the pot. Roast on low for 6-8 hours, or high for 4-6 hours. You want the meat to easily fall apart before removing. Once cooked, shred the meat in the juices and let it sit to meld together while you get the rest of the ingredients out.
