Chicken Parm Bake

This chicken parm bake is loaded with tender chicken breasts, marinara sauce, parmesan, and melty gooey mozzarella cheese. It's super easy to make and a total comfort food winner. Serve it over your favorite noodles, or with a vegetable medley to keep it low-carb. It's sure to be a crowd pleaser either way.

What you'll need: Serves 6
2 pounds of chicken breast
2 cups jarred marinara
8 oz mozzarella, shredded from block
8 oz fresh mozzarella, sliced
1/4 cup parmesan cheese, grated
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
1 tsp salt
fresh parsley for garnish

How to make it:
Preheat the oven to 400° F.

In a 9x13 baking dish, spread out a few heaping spoonfuls of marinara to cover the bottom. Set aside.

Pat chicken breast dry with a paper towel; sprinkle both sides with garlic powder, onion powder, Italian seasoning and salt. Place the chicken in the pan and douse a good cup or two of marinara over the tops. If you're serving with noodles, the more sauce the merrier.

Put sliced fresh mozzarella over each piece of chicken. Sprinkle the shredded mozzarella cheese all over the top, then add the parmesan cheese.

Cover with foil and bake for about 30 mins. Check the thickest part of the breast with a meat thermometer. The temp has to reach 165° F to be fully cooked. If temp has been reached, uncover the foil and stick under the broiler for a few mins to brown the cheese. Keep a close eye on it!

Serve hot and enjoy!

Tip: Shred the mozzarella cheese yourself. Pre-shredded bagged cheese contains preservatives that prevent it from melting properly. Plus, block just tastes better.
