Cheesy Chicken Casserole
This cheesy chicken casserole is so rich and creamy, it hits the spot for comfort food so hard.
What you'll need:
2 cups cooked chicken breast diced or shredded (rotisserie works great)
16 oz box of your favorite noodles
8 oz block mozzarella, shredded, divided 1:1
1/4 cup parmesan
8 oz cream cheese, softened
2 cups milk
4 Tbsp dried parsley, divided 2:2
1 tsp garlic powder
1 tsp onion powder
pinch of salt
How to make it:
Preheat the oven to 350° F. Boil water for your noodles. Add a large pinch of salt and cook 3-4 minutes under package directions.
Shred the mozzarella cheese block. In a medium size mixing bowl, add half the mozzarella (about 1 cup), all of the called for parmesan, then add 2 Tbsp parsley, the garlic powder, onion powder and salt. Mix and set aside.
In another larger mixing bowl, using an electric mixer, blend the softened cream cheese and milk until smooth.
Next, add in the cheese and herb mixture and the diced chicken, stir with a wooden spoon until combined.
Drain the noodles and add into the cheese mixture and combine. Pour into a 9x13 baking dish. Sprinkle the remaining 1 cup shredded mozzarella cheese on top, and then add fresh parsley.
Bake for 25 mins or until you see tiny bubbles. Turn broiler on low for a couple mins to brown the cheese.
Serve hot and enjoy!
