Caesar Salad Dressing

This homemade dressing beats store-bought by a mile. It’s super easy and crazy delicious — no blender, no raw egg, and ready in 5 minutes. Perfect for tossing with crisp romaine, croutons, and shaved parmesan.

What you'll need:
1/2 cup mayonnaise
2–3 Tbsp freshly grated Parmesan cheese
1 Tbsp lemon juice
1 tsp Dijon mustard
1–2 tsp Worcestershire sauce
1 small garlic clove, minced or grated
Salt & freshly ground black pepper, to taste
Optional: 1–2 tsp anchovy paste (or finely minced anchovies)

How to make it:
In a bowl, whisk together the mayo, Parmesan, lemon juice, Dijon, Worcestershire, garlic, and anchovy paste (if using). Add more lemon juice for tang, more Parm for saltiness, or a dash of water or milk to thin it out if needed.

Let it sit in the fridge for 15–30 minutes to let the flavors meld.

Toss chopped romaine with the dressing. Add homemade or store-bought croutons, then top with extra Parmesan and cracked pepper.
