Bruschetta Flatbread
Bruschetta is one of my favorite appetizers. Turning it into a flatbread gives it a fun twist, balancing between a crostini and pizza.
What you'll need: Serves 2-4
10 oz (or 1 cup) cherry tomatoes, diced
1 Burrata mozzarella cheese ball
1 large Naan bread
5 large basil leaves, chopped
olive oil drizzle
balsamic (glaze or vinegar) drizzle
salt to taste
How to make it:
Dice the tomatoes and basil, place in a bowl. Sprinkle with a pinch of salt and 1 tsp olive oil. Mix to combine.
Heat up the Nan bread in a skillet over medium heat for 2-3 minutes on each side.
Break open and spread the burrata over the crust.
Sprinkle on the tomato-basil mixture. Drizzle a little balsamic over.
Slice and enjoy!
