Boxed Cake Cookie Bars
Using boxed cake mix is an awesome hack for cookies if you’re in a pinch. You can easily make delicious, chewy cookies or cookie bars that taste just like your favorite cake.
What you'll need:
1 box (15.25 oz) of your favorite cake mix (any flavor)
1/2 cup (1 stick) melted butter (or plant butter)
2 large eggs
1 teaspoon vanilla extract
1 cup mix-ins (*optional: chocolate chips, sprinkles, nuts, etc.)
How to make it:
Preheat your oven to 350°F and lightly grease or line a 9x13-inch (or 9x9 for thicker bars) baking dish with parchment paper.
In a large bowl, combine the cake mix, melted butter, eggs, and vanilla extract. Stir until a thick dough forms.
Fold in your choice of mix-ins until evenly distributed.
Spread the dough evenly into the prepared baking dish, pressing it down slightly with a spatula or your hands.
Bake for 17–20 minutes, or until the edges are slightly golden brown and a toothpick inserted into the center comes out clean.
Allow the cookie bars to cool completely in the pan before slicing them into squares or rectangles.
