Blackberry & Goat Cheese Flatbread
This flatbread it legit a treat. It has strong flavors that all compliment each other beautifully. It's sweet from the homemade date sauce and honey, tart from the blackberries, tangy from the goat cheese, and then the basil ties it all together perfectly. It makes for a delicious appetizer or a boujie weeknight dinner.
What you'll need:
Naan bread or homemade pizza dough
6oz pkg fresh blackberries
4oz log honey goat cheese
2 dates to make the sauce/paste, or jarred fig spread
fresh basil leaves
drizzle of honey
How to make it:
Preheat the oven to 425° F for naan bread. Or, make the dough as directed.
Remove and discard the pits from the dates. Place the dates into a bowl of hot (low boiled) water and set soak for 5 minutes. After soaking, set dates aside and reserve 1/4 cup of the water and discard the rest. Using a hand emulsion blender, blend the dates into a paste. Add the reserved water to thin out to make more of a sauce.
Spread the date sauce (or fig spread) onto the flatbread.
Slice the blackberries in half lengthwise. Place down on the sauce.
Sprinkle the goat cheese all over.
Top with fresh basil.
Drizzle with a little honey.
Bake for about 8 minutes. This will heat and slightly crisp the crust, as well as soften the blackberries.
Give it another dose of honey and more fresh basil.
Slice, serve and enjoy!
