Avocado Chocolate Pudding
My friend has been getting on me to make her amazing chocolate pudding, so here we are - and, boy does it deliver! What a perfect, delicious (healthy even!) treat. It's thick, rich, and not too sweet.
What you'll need: Serves 2-4
2 small avocados
1/4 cup Dutch cocoa powder
1/2 cup milk (I used full fat coconut milk)
1/4 cup maple syrup (not pancake syrup)
1 tsp vanilla bean paste (or extract)
1/2 tsp salt
Optional toppings:
whipped cream
berries
How to make it:
In a food processor, blender, or by using an emulsion blender, blend up all of the combined ingredients for about 1 minute until smooth. Adjust maple syrup to taste.
Pour into pudding cups and top with whipped cream, berries, or just eat as is.
